The story behind the Meatless Meatballs is quite common with anyone that is a Parent. I am sure you have one or two similiar to this story so feel free to share yours with me as well.
Many years ago my then 8 year old Daughter had lightly mentioned to me while she was getting ready for bed that she had to bring in an Ethnic Food the next day. I asked her, "Honey, did you tell your Teacher what you were contributing to the Feast Table?" she said: "Yes Mommy, I told her Meatballs." I then proceeded to ask the question I most feared the answer to: "Ok Honey that is nice, how many do we have to make?" she said: "There are 2 Teachers, 1 Principal, 31 Students and their Parents."
You can just imagine the look on my face, my eyes were popped out. So we did the math and figured 100 meatballs should be enough. I could not go to the store and get all the required ingredients so, I had to get real creative here and come up with a solution and that is where the Birth of my meatless meatballs recipe was created.
6 cups Flavored bread crumbs
6 slightly beaten eggs
1 cup chopped onion
1 cup chopped parsley
1/2 - 3/4 cup grated Romano or Parmesan cheese
Salt & pepper to taste
Corn oil for frying
Bowl of water
In a large bowl mix first 6 ingredients till well blended. If the mixture seems dry, gradually add water until firm but moist enough to shape into a ball.
Heat oil and moisten hands with bowl of water on the side and start rolling balls. When egg balls are browned all around add to sauce.
Simmer in sauce and then serve.
*If you want to get creative... push a roasted garlic clove into each egg ball before frying.

Chocoholics Dream Come True
Let me be your Chocoholics Dream Come True. There comes a point in every Chocoholics life that they wonder if there is the ULTIMATE Chocolate atisfaction out there.
I am here to say: "Yes there is."
When I first made this many years ago for one of my Christmas desserts, I actually pinched myself because I thought I was in Heaven when I tasted it. The response from my Dinner Guests was complete silence. We could literally hear a pin drop in the Dining room while we all savored each and every delectable bite.
Needless to say, I am expected to have this Dessert on the table not just for Christmas but for all Holidays.
I hope you enjoy this as much as we all have throughout the years.
Chocolate Truffle with Raspberry Sauce
1 cup light corn syrup - divided
16 ounces semisweet chocolate
1/2 cup butter = 1 stick
3 egg yolks
2 cups heavy cream
1/4 cup powdered sugar
1 teaspoon vanilla
1 10-oz package of frozen raspberries - thawed
Line a 9 x 5 x 3 loaf pan with plastic wrap draping over sides to cover loaf
1. Combine 1/2 cup corn syrup chocolate and butter in a medium size pot over medium
heat and stir until the chocolate is melted and all blended.
2. Mix 1/2 heavy cream with the egg yolks in a small bowl. Add to the chocolate mixture.
Cook 3 minutes over medium heat stirring constantly ... Cool to room temperature.
3. Beat the remaining 1 1/2 cups of heavy cream with powdered sugar, vanilla in a
Separate mixing bowl at medium speed until soft peaks form. .
4. Fold the whipped cream into the cooled down chocolate mixture until all combined.
5. Transfer the entire chocolate mixture into the lined loaf pan and cover with the plastic
Wrap.
6. Chill in freezer for 4 hours or until firm.
7. For easy slicing, thaw slightly in refrigerator (30minutes to 1 hour) before serving.
8. Remove truffle loaf from pan lifting the plastic wrap out of the pan.
9. Put on decorative plate, sprinkle powdered cocoa on top and drizzle Raspberry Sauce
To prepare Raspberry sauce:
Puree raspberries in blender, if desired, strain puree to remove seeds. Blend in remaining corn syrup till smooth.

3 Teen Daughters Survival
This is what I call the 3 Teen Daughters Survival journal.
The teen Girl years! I had 3 teenage Girls under one roof for 7 years.
And you ask yourself "How in the world did this Woman survive?" I often asked myself the exact same question. It is plain and simple, consistent praying and meditation.
I would lock myself in my room, light a candle, lay down, close my eyes and meditate until one of them knocked feverishly, I would then do a quick prayer to give me strength and then granted permission to enter.
Once I got through the endless, "Can I go" Can I have" Can I see" Can I invite" Can I, Can I, Can I" and had to rebut the majority of the "Can I" I was then down to two (2) Girl teens ;-) getting through the "Your the worst Mom" "You just do not like me" "You never let me do anything" "You, You, You" was another reason I needed to put my plain and simple plan into action. I continued my plain and simple plan until I was down to one (1) teen Girl !
The main goal to have these "Girl Teens" turn out to be terrific young woman is to be EXTREMELY consistent with your rebuttals, No means No and Yes means Yes no matter how many doors get slammed. Which reminds me of a time when one of my Girls just loved the idea of slamming her door when she did not get her way. Well, I solved that little problem very quickly, I just took the door off the hinges, leaned the door up against the wall for 7 days, believe me, there is NOTHING worse than taking the privacy away from a teen Girl. She quickly learned that her attitude was not getting her anywhere and her sisters learned it as well.
So there you have it, did I survive, I think so. I am proud to say, all three (3) of my Daughters are TERRIFIC and hope they utilize the same "Plain and Simple" techniques I used.
